Marinated Kipper Salad with New Potatoes, Apple and Fennel

You need to use kippers on the bone for this as they are firmer.
Ingredients
- 2 large kippers on the bone
- 1 medium red onion, thinly sliced
- 2 tsp chopped fresh tarragon
- olive oil
- 750g French-style salad potatoes, such as Charlotte or Nicola
- 1-2 tbsp white wine vinegar
- 1 bulb fennel
- 2 small or 1 large dessert apple
- 3 tbsp crème fraîche
- 2 tbsp snipped chives, plus a few extra
- salt and freshly ground black pepper
- wholemeal or rye bread and salad leaves, to serve

- Skin the kippers and remove the fillets from the bone. Lay in a shallow dish over a layer of onion, season with black pepper, sprinkle over half the tarragon, then pour over oil to just cover (about l). Cover and leave in the fridge overnight.
- Boil the potatoes in salted water until tender. Drain, cool, skin if preferred, then slice into a bowl. Add tbsp olive oil from the marinade and tbsp vinegar. Mix. Finely slice the fennel, reserving any feathery tops. Core and finely slice the apple, then mix both into the potatoes with the cr&#me fraiche, chives and remaining tarragon.
- Drain the kippers from the marinade and dry with kitchen paper, reserving the marinade. Slice into long, thin slices (this is easier if you chill the kippers) and put on individual plates. Drizzle each with tsp marinade. Add a portion of salad and scatter a little of the onion from the marinade.
- Scatter over the fennel tops and extra chives. Serve with wholemeal or rye bread and salad leaves.
