This emulsion of egg yolk and oil with some seasonings such as lemon juice, vinegar and mustard powder is easy to make, as long as you add the oil slowly (a few drops at a time) and beat continuously with a wooden spoon
Ingredients
- 2 medium egg yolks
- salt and freshly ground black pepper
- 1 tsp mustard powder
- 300ml light oil (sunflower or vegetable) or olive oil
- lemon juice, to taste
- 1 tbsp white wine vinegar

- Put the yolks in a bowl, add the seasoning and mustard powder, and beat with a wooden spoon.
- Pour the oil one or two drops at a time as you beat. You may want to steady the mixing bowl on a damp tea towel. After a few minutes, the mixture should begin to thicken and pale. Add a squeeze of lemon juice and continue adding the oil, alternating with the vinegar a few drops of oil, a few drops of vinegar until all the vinegar is used up. You can then continue adding the oil, this time in a thin, steady flow, until the mixture is thick and creamy. Season once more to taste.
