Meatballs in Tomato Sauce

Ingredients

  • 500g steak mince

  • 25g white breadcrumbs
  • 25g freshly grated parmesan
  • 1 tbsp dried mixed herbs
  • 1 medium egg, beaten
  • 1 clove garlic, crushed
  • 1 tbsp olive oil
  • pinch each of salt and ground black pepper
  • For the tomato sauce:

  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, crushed
  • 1 red pepper, deseeded and finely chopped
  • 1 yellow pepper, deseeded and finely chopped
  • 2 tsp tomato purée
  • 400g can chopped tomatoes
  • 4 tbsp fresh parsley, chopped
  • 3 tbsp water
  • salt and ground black pepper

Directions

  1. Preheat the oven to //gas mark Place all the meatball ingredients apart from the oil into a bowl, and combine thoroughly. Divide the mixture into and shape into balls. Leave them to rest for approximately minutes.
  2. Place the oil in a large frying pan and heat on the hob. Add the meatballs and cook for minutes until lightly browned. Remove the meatballs from the heat, and place in an ovenproof dish.
  3. Meanwhile, to make the sauce, heat the oil in a frying pan, and fry the onion and garlic for minutes until softened. Add the peppers and saut&# for a further minutes. Then add the tomato pur&#e, chopped tomatoes, fresh parsley, water, salt and pepper and bring to the boil. Season well.
  4. Pour the sauce over the meatballs, cover and cook in the centre of a preheated oven for minutes. Serve with rice or pasta and salad.
