Meatballs in Tomato Sauce

500g steak mince
- 25g white breadcrumbs
- 25g freshly grated parmesan
- 1 tbsp dried mixed herbs
- 1 medium egg, beaten
- 1 clove garlic, crushed
- 1 tbsp olive oil
- pinch each of salt and ground black pepper
For the tomato sauce:
- 1 tbsp olive oil
- 1 onion, finely chopped
- 2 cloves garlic, crushed
- 1 red pepper, deseeded and finely chopped
- 1 yellow pepper, deseeded and finely chopped
- 2 tsp tomato purée
- 400g can chopped tomatoes
- 4 tbsp fresh parsley, chopped
- 3 tbsp water
- salt and ground black pepper

- Preheat the oven to //gas mark Place all the meatball ingredients apart from the oil into a bowl, and combine thoroughly. Divide the mixture into and shape into balls. Leave them to rest for approximately minutes.
- Place the oil in a large frying pan and heat on the hob. Add the meatballs and cook for minutes until lightly browned. Remove the meatballs from the heat, and place in an ovenproof dish.
- Meanwhile, to make the sauce, heat the oil in a frying pan, and fry the onion and garlic for minutes until softened. Add the peppers and saut for a further minutes. Then add the tomato pure, chopped tomatoes, fresh parsley, water, salt and pepper and bring to the boil. Season well.
- Pour the sauce over the meatballs, cover and cook in the centre of a preheated oven for minutes. Serve with rice or pasta and salad.
