- 1 onion choped
- 1 large red pepper, deseeded and chopped
- 2 garlic cloves, finely chopped
- 1 tbsp olive oil
- 1x400g can tomatoes

- Fry the onion, red pepper and garlic in the oil in a covered saucepan for - mins, or until the vegetables are tender.
- Add the tomatoes and stir, breaking them up a bit with the spoon. Leave to cook gently, uncovered, for - mins, stirring occasionally, until the mixture is thick.
