Mediterranean chicken salad with Parma ham

This delicious main course salad is packed with fabulous flavours, textures and colours - you just know it's good for you!
Ingredients
- 2 heads chicory, broken into separate leaves
- 1 small bulb fennel, thinly sliced
- 2 large tomatoes, sliced
- 50g (2oz) black or green olives
- 2 chicken breasts, roasted
- 4 tbsp olive oil
- 2 tbsp lemon juice or white wine vinegar
- 1/2 tsp Dijon mustard
- Salt and freshly ground black pepper
- 6 slices Parma ham
- A few basil leaves

- In a salad bowl, combine the chicory, fennel, tomatoes and olives. Tear up the chicken breasts and add them to the bowl
- Make the dressing by whisking together the olive oil, lemon juice or vinegar, mustard and seasoning. Pour it into the salad bowl and toss all the ingredients together
