- 2 small aubergines, about 500g in total
- 2 large courgettes, about 500g in total
- 2 red peppers, quartered and deseeded
- 4 large open mushrooms, quartered
- 5 tbsp olive oil
- 2 garlic cloves. crushed
- 2 tbsp capers
- 1 bunch fresh basil, shredded
- balsamic vinegar or lemon juice
- salt and freshly ground black pepper
- warm Italian bread, to serve if desired

- Cut the aubergines and courgettes on the diagonal into thin slices. Brush all the vegetables lightly with olive oil and sprinkle with salt and pepper.
- Preheat the grill to high and grill the vegetables in batches until lightly charred on both sides, or cook on a ridged grill pan over medium heat.
- Arrange on a platter and sprinkle with the garlic, capers and basil. Drizzle with balsamic vinegar or lemon juice. Serve with warm Italian bread.
