Mediterranean Grilled Vegetables

Ingredients

  • 2 small aubergines, about 500g in total
  • 2 large courgettes, about 500g in total
  • 2 red peppers, quartered and deseeded
  • 4 large open mushrooms, quartered
  • 5 tbsp olive oil
  • 2 garlic cloves. crushed
  • 2 tbsp capers
  • 1 bunch fresh basil, shredded
  • balsamic vinegar or lemon juice
  • salt and freshly ground black pepper
  • warm Italian bread, to serve if desired

Directions

  1. Cut the aubergines and courgettes on the diagonal into thin slices. Brush all the vegetables lightly with olive oil and sprinkle with salt and pepper.
  2. Preheat the grill to high and grill the vegetables in batches until lightly charred on both sides, or cook on a ridged grill pan over medium heat.
  3. Arrange on a platter and sprinkle with the garlic, capers and basil. Drizzle with balsamic vinegar or lemon juice. Serve with warm Italian bread.
