Mediterranean Tomato and Bacon Soup

Combining Mediterranean ingredients, this rich and tasty soup - the same as in Heinz tinned version - is a mixture of sun-dried tomatoes, smoked bacon and lima beans
Ingredients
- 155g dried lima beans, soaked overnight
- 40ml rapeseed oil
- 120 g onions, finely chopped
- 120g carrots, finely chopped
- 60g smoked bacon, finely chopped
- 130g tomato puree
- 1/2 teaspoon smoked dulce paprika
- 20g sun-dried tomatoes, soaked
- 1/2 teaspoon caster sugar
- 100g canned plum tomatoes, roughly chopped
- 172ml water
- salt and coarsely ground black pepper

- Cook the soaked beans for minutes gently to soften, drain.
- Heat the pan and add half the oil. Add onions, carrots and smoked bacon and cook for minutes.
- Stir in the tomato puree, cook for minutes then add smoked paprika, sun-dried tomatoes, sugar and tomatoes cooking for a further minutes.
- Pour in water, softened lima beans and simmer for a further minutes.
