Mediterranean Tomato and Bacon Soup

Combining Mediterranean ingredients, this rich and tasty soup - the same as in Heinz tinned version - is a mixture of sun-dried tomatoes, smoked bacon and lima beans
 

Ingredients

  • 155g dried lima beans, soaked overnight
  • 40ml rapeseed oil
  • 120 g onions, finely chopped
  • 120g carrots, finely chopped
  • 60g smoked bacon, finely chopped
  • 130g tomato puree
  • 1/2 teaspoon smoked dulce paprika
  • 20g sun-dried tomatoes, soaked
  • 1/2 teaspoon caster sugar
  • 100g canned plum tomatoes, roughly chopped
  • 172ml water
  • salt and coarsely ground black pepper

Directions

  1. Cook the soaked beans for minutes gently to soften, drain.
  2. Heat the pan and add half the oil. Add onions, carrots and smoked bacon and cook for minutes.
  3. Stir in the tomato puree, cook for minutes then add smoked paprika, sun-dried tomatoes, sugar and tomatoes cooking for a further minutes.
  4. Pour in water, softened lima beans and simmer for a further minutes.
