Ingredients

  • 1 clove garlic, minced or very finely chopped
  • 1 tsp fresh root ginger, minced or grated
  • 2 tbsp tomato puree
  • 1 tbsp fresh or bottled lemon juice
  • 1 tbsp freshly chopped flat-leaf parsley
  • 1 tsp freshly chopped mint
  • 1/2 tsp ground cumin
  • pinch cayenne pepper
  • 650g lamb mince
  • pitta bread, salad and yoghurt, to serve

Directions

  1. Preheat the grill or barbecue. Put all the ingredients, except for the lamb, in a bowl and mix together. Add the lamb and mix well using your hands.
  2. Shape the mixture into sausages. Thread them on to skewers. Cook under the grill or on the barbecue for about - minutes, turning them over from time to time. Serve with pitta bread, salad and yoghurt.
