- 1 clove garlic, minced or very finely chopped
- 1 tsp fresh root ginger, minced or grated
- 2 tbsp tomato puree
- 1 tbsp fresh or bottled lemon juice
- 1 tbsp freshly chopped flat-leaf parsley
- 1 tsp freshly chopped mint
- 1/2 tsp ground cumin
- pinch cayenne pepper
- 650g lamb mince
- pitta bread, salad and yoghurt, to serve

- Preheat the grill or barbecue. Put all the ingredients, except for the lamb, in a bowl and mix together. Add the lamb and mix well using your hands.
- Shape the mixture into sausages. Thread them on to skewers. Cook under the grill or on the barbecue for about - minutes, turning them over from time to time. Serve with pitta bread, salad and yoghurt.
