'The smell of mint does stir up the mind and the taste to a greedy desire of meat' said herbalist John Gerard in 1633, and mint sauce is certainly the perfect partner to a roast lamb
 

Ingredients

  • 2 tbsp boiling water
  • 1 tbsp light brown sugar
  • 1 handful fresh mint leaves, very finely chopped
  • 10 tbsp white wine vinegar
Preparation: 5   Total Time: 5min whats this
 

Directions

  1. Pour the boiling water over the sugar and stir to dissolve. Add the chopped mint and vinegar and leave to cool for to hours to allow flavours to develop.
