'The smell of mint does stir up the mind and the taste to a greedy desire of meat' said herbalist John Gerard in 1633, and mint sauce is certainly the perfect partner to a roast lamb
Ingredients
- 2 tbsp boiling water
- 1 tbsp light brown sugar
- 1 handful fresh mint leaves, very finely chopped
- 10 tbsp white wine vinegar

- Pour the boiling water over the sugar and stir to dissolve. Add the chopped mint and vinegar and leave to cool for to hours to allow flavours to develop.
