A favourite in the bars of Cuba, and, like the Daiquiri, forever associated with the great drinker and writer Ernest Hemingway
Ingredients
- 1 tsp sugar
- 4 sprigs mint
- juice of 1 lime
- ice
- 1 measure light Havana rum
- soda water or lemonade

- Muddle the sugar and sprigs of mint together in a tall hi-ball glass. Add the ice, squeeze in the lime juice, and pour in the rum and soda. Stir and garnish with the remaining mint.
