Ingredients

  • 375g ready-to-roll puff pastry
  • beaten egg or 1 tbsp milk to glaze
  • 2 tomatoes, deseeded and diced
  • 1 green pepper, deseeded and diced
  • ½ red onion, diced
  • 1 clove garlic, crushed
  • 1 tbsp freshly chopped rosemary, or 1 tsp dried rosemary
  • 1 tbsp pine nut kernels
  • 200g grated mozzarella
  • salt and freshly ground black pepper
  • olive oil for drizzling

Directions

  1. Preheat the oven to //gas mark Cut out x .m (n) circles from the pastry and score a rim of m/&#in inside each one. Place on a baking sheet and glaze the rims of the pastry cases with beaten egg or milk. Bake for - minutes or until golden brown.
  2. Meanwhile, mix the tomatoes, pepper and onion with the garlic, rosemary, pine nuts and mozzarella, then season lightly.
  3. Press down the inner circles of the cooked pastry to make a firmer base, then pile the vegetable mixture into the pastry cases. Return to the oven for minutes until the cheese has melted but the vegetables are still crisp. Drizzle a little oil over the pizzas before serving.
