- 500g/1lb 2oz mushrooms, sliced
- 2 garlic cloves, finely chopped
- 1 tbsp olive oil
- 2 large eggs, whisked
- 2 egg whites, whisked
- 1 tbsp freshly chopped parsley
- Salt and freshly ground black pepper

- Fry the mushrooms and garlic in the olive oil in a large frying pan for about mins, until the mushrooms are tender and any liquid has boiled away. Season.
- Preheat the grill. Mix the eggs and the egg whites and pour over the mushrooms. Cook over a moderate heat until the base of the omelette has set.
