Ingredients

  • 500g/1lb 2oz mushrooms, sliced
  • 2 garlic cloves, finely chopped
  • 1 tbsp olive oil
  • 2 large eggs, whisked
  • 2 egg whites, whisked
  • 1 tbsp freshly chopped parsley
  • Salt and freshly ground black pepper
Serves: 2 Preparation: 35   Total Time: 35min whats this
 

Directions

  1. Fry the mushrooms and garlic in the olive oil in a large frying pan for about mins, until the mushrooms are tender and any liquid has boiled away. Season.
  2. Preheat the grill. Mix the eggs and the egg whites and pour over the mushrooms. Cook over a moderate heat until the base of the omelette has set.
