Mushrooms with Baby New Potatoes and Spinach Yellow Curry

Turn a jar of sauce into a scrumptious meal with this mushroom and potato curry, courtesy of Loyd Grossman
Ingredients
- 500g baby new potatoes
- 2 tablespoons sunflower oil
- 2 fat cloves garlic, sliced
- 2 shallots or 1 small onion, sliced
- large fresh red chilli, sliced thinly, optional
- 250g whole button mushrooms
- 200g bag young spinach leaves
- 1 jar Loyd Grossman Yellow Thai Curry Sauce
- sea salt and freshly ground black pepper

- Boil the potatoes for 12-15 minutes until just tender. Drain.
- Heat the oil in a wok and stir-fry the garlic, shallot or onion and chilli (if using) for 2 minutes. Then add the mushrooms and stir-fry for 2 more minutes.
- Add the potatoes, stir and heat then mix in the spinach, stirring until cooked. Finally, pour in the sauce. Season, bring to the boil and simmer for 3 minutes.
