Mussels with Black Bean Sauce

A large crusty baguette is the ideal accompaniment to this dish - great for soaking up all those delicious juices
Ingredients
- 1 tbsp vegetable oil
- 1 tsp freshly ground black pepper
- 2 red chillies, de-seeded and finely chopped
- 2 garlic cloves, crushed
- 1 kg mussels, washed, scrubbed and de-bearded
- 60ml fish stock
- 1 sachet Blue Dragon Black Bean Stir Fry sauce
- 1 tbsp Blue Dragon Shaoxing Wine
- Large handful coriander leaves
- Large handful Thai basil leaves, for garnish (optional)

- Heat the oil in a wok over a high heat until hot. Add the pepper, chillies and garlic and stir fry for about seconds until fragrant
- Add the mussels and stir to mix, then add the stock, Blue Dragon Black Bean Stir Fry sauce and Blue Dragon Shaoxing Rice Wine. Cover the pan and cook for about minutes until the mussels have opened
- Toss in the coriander and basil leaves then transfer the mussels to a large serving dish, discarding any that have not opened
- Serve immediately
