This dish is taken from Slimming World's 30 Minute Meals, published by Ebury Press, 15 pounds and 99 pence.
 

Ingredients

  • 2kg/4.5lb fresh, live mussels
  • 6 garlic cloves, peeled and finely chopped
  • 2 bay leaves
  • 1 tbsp crushed coriander seeds
  • 100ml/3.5fl oz dry white wine
  • 200ml/7fl oz chicken stock made with Bovril
  • salt and freshly ground black pepper

Directions

  1. Scrub and remove any 'beards' from the mussels and discard any that are open.
  2. Place the mussels, garlic, bay leaves, coriander, wine and stock in a large saucepan and place over a high heat. Cover tightly and cook for minutes, shaking the pan frequently, until the mussels have opened. Discard any that remain closed.
  3. Drain the mussels, reserving any juices and divide between four warmed bowls. Spoon over the juices, garnish with the chopped parsley, season and serve immediately.
