Oil and Water Spray with Basil

Avoid using butter, fat or oil by opting for an oil-water solution. Invest in a good spray bottle, fill it with half olive oil and half water, and when you need to use oil, spray with your atomiser instead. Add taste by including herbs.
Ingredients
- 150ml olive oil
- 100ml water
- 1 clove garlic, quartered
- 5 sprigs sweet basil, torn
You will also need an atomiser or spray bottle (buy a chic stainless steel bottle they look great and work well too)

- Simply pour the oil and water into the spray bottle and add the garlic and basil. Shake well and leave to rest for at least two weeks in the fridge.
- Variations: This recipe is excellent for pasta and fish dishes, but you can change the ingredients to suit your own tastes. If you include chillies, cut them slightly to release their flavour.
- Note: Herbs can clog the spray tube, so always shake before use.
