Organic Spaghetti with Sausage, Lemon and Olives

5 tbsp extra-virgin olive oil
- 450g good-quality pork and herb sausages, skinned
- 3 garlic cloves, crushed
- 2 tsp caraway seeds, crushed
- 500g spaghetti, linguine, fettuccine or tagliatelle
- 50g pitted black olives, sliced
- shaved parmesan and roughly crushed black pepper to serve
- salt

- Heat tbsp olive oil in a frying pan. Fry the sausage meat, garlic, caraway seeds and half the lemon zest until the mixture becomes crumbly and golden.
- Meanwhile, bring a large pan of salted water to the boil and cook the spaghetti to packet instructions.
- Drain well, tip into a warm serving dish, fold in the sausage mixture and top with the remaining lemon zest, oil and lemon juice.
- Add the olives, toss and serve topped with parmesan and black pepper.
