Oven Cooked Chicken Nicoise

Ingredients

  • 750g new potatoes
  • 2 chicken thighs
  • pinch cayenne
  • 2 tsp paprika
  • 1 onion, thinly sliced
  • 1 red pepper
  • 3 cloves garlic
  • 2 tsp extra-virgin olive oil
  • 100g feta cheese
  • 16 black olives
  • 2 tsp flat-leaf parsley
  • salt and freshly ground black pepper

Directions

  1. Heat the oven to //gas mark Put the potatoes into a pan of boiling water and cook for minutes.
  2. Toss the chicken with the cayenne and paprika to coat evenly. Place in a large ovenproof dish. Add the onion, red pepper and garlic. Drain the potatoes and add to the dish, season and toss together with the oil.
  3. Cook for minutes, toss again, and cook for a further minutes until golden and the chicken has cooked through. Remove from the oven, crumble over the feta, add olives and parsley and serve immediately.
