Oven Cooked Chicken Nicoise

- 750g new potatoes
- 2 chicken thighs
- pinch cayenne
- 2 tsp paprika
- 1 onion, thinly sliced
- 1 red pepper
- 3 cloves garlic
- 2 tsp extra-virgin olive oil
- 100g feta cheese
- 16 black olives
- 2 tsp flat-leaf parsley
- salt and freshly ground black pepper

- Heat the oven to //gas mark Put the potatoes into a pan of boiling water and cook for minutes.
- Toss the chicken with the cayenne and paprika to coat evenly. Place in a large ovenproof dish. Add the onion, red pepper and garlic. Drain the potatoes and add to the dish, season and toss together with the oil.
- Cook for minutes, toss again, and cook for a further minutes until golden and the chicken has cooked through. Remove from the oven, crumble over the feta, add olives and parsley and serve immediately.
