Parma-wrapped halibut

Wrap fresh halibut fillets in slices of Parma ham, then cook in a Marsala sauce for a fabulous meal - perfect for a special occasion.
Ingredients
- 8 fresh sage leaves
- 4 x 175g (6oz) halibut fillets
- 8 slices Parma ham
- 2 tbsp olive oil
- 6 tbsp Marsala or sweet sherry
- 200ml (1/3 pt) hot vegetable stock
- 1 tsp balsamic vinegar
- Salt and freshly ground black pepper
- Fresh green vegetables, such as fine green beans and courgettes, to serve

- Place two sage leaves on top of each halibut fillet. Season with a little salt and pepper, then wrap two slices of Parma ham around each one
- Heat the olive oil in a large frying pan and add the Parma-wrapped fish. Cook over a medium-high heat for two or three minutes, turning once
- Add the Marsala or sweet sherry to the pan with the stock. Reduce the heat and simmer for - minutes, partially covering the pan with a lid or sheet of foil
