Pasta with Asparagus Cream Sauce

Ingredients

  • 300g dried pasta sprials (stortelli)

  • 250g asparagus
  • 1 tbsp vegetable oil
  • 1 medium onion, finely chopped
  • 300ml double or whipping cream
  • 50g freshly grated parmesan cheese
  • salt and freshly ground black pepper
  • tomato salad, to serve

Directions

  1. Bring a large saucepan of salted water to the boil and cook the pasta spirals for minutes.
  2. Meanwhile, break each asparagus stalk into pieces, discarding the woody ends of the stalks. Add to the pasta and cook for a further minutes.
  3. While this is cooking, heat the oil in a small frying pan and cook the onion until lightly golden. Add the cream and bring to a simmer.
  4. Drain the pasta and asparagus. Return to the pan and add the cream mixture, parmesan and plenty of pepper. Mix well and serve at once with a tomato salad if you like.
