Pasta with Coriander and Goats' Cheese Pesto

Ingredients

  • 1 garlic clove, crushed

  • 50g fresh coriander
  • 1 tbsp pine nuts
  • 150ml extra-virgin olive oil
  • 2 tbsp freshly grated parmesan
  • 150g soft goats' cheese, such as Welsh organic
  • 500g dried pasta
  • salt and freshly ground pepper to taste

Directions

  1. To make the pesto, put the garlic, coriander and pine nuts into a liquidiser and whizz to a pur&#e, gradually adding the olive oil. Add the cheeses and blend again until the mixture has a thick, sauce-like consistency. Season to taste with salt and pepper.
  2. Cook the pasta according to packet instructions, drain well and toss, while still warm, with the pesto.
