Pasta with Coriander and Goats' Cheese Pesto

1 garlic clove, crushed
- 50g fresh coriander
- 1 tbsp pine nuts
- 150ml extra-virgin olive oil
- 2 tbsp freshly grated parmesan
- 150g soft goats' cheese, such as Welsh organic
- 500g dried pasta
- salt and freshly ground pepper to taste

- To make the pesto, put the garlic, coriander and pine nuts into a liquidiser and whizz to a pure, gradually adding the olive oil. Add the cheeses and blend again until the mixture has a thick, sauce-like consistency. Season to taste with salt and pepper.
- Cook the pasta according to packet instructions, drain well and toss, while still warm, with the pesto.
