Pasta with Garlic and Chilli

This piquant pasta is perfect if you're in a rush, on a budget or running low of ingredients
Ingredients
- 500g spaghetti
- 100ml extra virgin olive oil
- 23 cloves garlic, finely chopped
- 2 red chillies, deseeded and finely chopped
- salt and black pepper
- fresh flatleaf parsley, chopped (optional)

- Cook the pasta in a large pan of boiling, salted water.
- Meanwhile, heat the olive oil in a small saucepan and cook the garlic and chilli very gently for several minutes. They should just be allowed to infuse, not fry or colour. Add the salt and pepper.
- Drain the pasta and return to the pan. Pour over the oil and chilli and mix well, adding the parsley, if using. Serve immediately.
