Pasta with Wild Mushroom Sauce

15g Italian dried mushrooms (porcini)
- 250g dried pasta such as fusilli or penne
- 2 tbsp vegetable oil
- 1 small onion
- 1 clove garlic, crushed (optional)
- 100g wild mushrooms
- 140ml double cream
- 4 tbsp chopped parsley
- 25g shaved parmesan
- salt and freshly ground black pepper

- Just cover the dried mushrooms with boiling water, no more than l, and leave to soak while you prepare everything else.
- Meanwhile, cook the pasta in boiling salted water according to the instructions on the packet. Drain thoroughly.
- While the pasta is cooking, heat the oil in a frying pan and saut the onion for about minutes, until softened. Drain the dried mushrooms and chop them. Reserve and strain the soaking liquid.
- Add the garlic, if using, wild and dried mushrooms to the onion and saut over a high heat for minute. Add the mushroom liquid and boil until the liquid is almost evaporated. Stir in the cream, season generously and simmer the sauce for minutes. Add the drained pasta and warm through. Toss in the parsley and parmesan and serve at once.
