Ingredients

  • 4 large ripe peaches, quartered and stoned
  • 1 tbsp caster sugar
  • 75g plain flour, plus 1 tbsp
  • 2 tbsp peach Schnapps or brandy
  • 2 x 113g punnets blueberries
  • 75g demerara sugar
  • 75g butter, softened
  • mint leaves to decorate
  • whipped cream flavoured with a little peach Schnapps and sweetened with a little icing sugar to taste, if wished, to serve

Directions

  1. Preheat the oven to //gas mark Mix together the peaches, caster sugar, the tbsp flour and the schnapps. Transfer to a large ovenproof baking dish and sprinkle over the blueberries.
  2. Work the remaining flour, the demerara sugar and butter together to form a rough mixture, and scatter over the fruit &# it should not cover it, but fall in small clusters.
  3. Cook uncovered for - minutes, until the buttery mixture is crisp and golden. Serve warm with whipped cream flavoured with peach Schnapps and sweetened with a little icing sugar to taste, if wished. Decorate with mint leaves.
