Ingredients
- For the dressing:
- juice of 1/2 lemon
- 2 tbsp olive oil
- 1 tsp wholegrain mustard
- 1 clove garlic, crushed
- 75g feta cheese
- For the salad:
- 2 fresh peaches, stoned and quartered
- 1 iceberg lettuce, shredded
- 75g walnuts, halved
- 4 tomatoes, quartered
- 1/2 cucumber, cubed
- 4 spring onions, finely chopped
- 225g new potatoes, cooked
- 25g olives, halved
- 10 capers
- 1 tbsp parsley, chopped

- Combine the dressing ingredients except the feta cheese and shake together in a screwtop jar. Then add the cheese to soak up the flavours.
- Mix all the salad ingredients together in a large bowl. Just before you serve it, pour on the dressing and cheese and toss thoroughly.
