Ingredients

  • Eggs 6
  • Oil
  • Red onion 1, halved and sliced
  • Red pepper 1, chopped into 2cm pieces
  • Goat's cheese 100g
  • Paprika 1/2 tsp
  • Soft herbs a small handful of parsley and chives, roughly chopped
Serves: 2   Cook Time: 15 Total Time: 15min whats this
 

Directions

  1. Beat the eggs and season well. Heat tbsp oil in a small non-stick frying pan and cook the onion and red pepper for minutes to soften. Add the eggs and cook for minutes until almost set.
  2. Dot the goat's cheese over, then scatter the paprika and herbs over the top and slide under a hot grill for minutes until golden. Cut into wedges and serve with salad.
