- Eggs 6
- Oil
- Red onion 1, halved and sliced
- Red pepper 1, chopped into 2cm pieces
- Goat's cheese 100g
- Paprika 1/2 tsp
- Soft herbs a small handful of parsley and chives, roughly chopped

- Beat the eggs and season well. Heat tbsp oil in a small non-stick frying pan and cook the onion and red pepper for minutes to soften. Add the eggs and cook for minutes until almost set.
- Dot the goat's cheese over, then scatter the paprika and herbs over the top and slide under a hot grill for minutes until golden. Cut into wedges and serve with salad.
