Peppers in Balsamic Vinegar

A dish of mixed peppers which can be served hot or cold.
 

Ingredients

  • 3 large red peppers, deseeded
  • 3 large yellow peppers, deseeded
  • 1 tsp salt
  • 4 tbsp balsamic vinegar
  • 3 tbsp olive oil

Directions

  1. Quarter the peppers and toss in a large, wide pan with the salt. Add the balsamic vinegar, cover and cook over a gentle heat for up to hour until tender.
  2. Remove the lid, add the oil and cook for a further minutes, stirring occasionally until the sauce is thickened and syrupy. Serve warm or cold.
