Phil Vickery's baked buttermilk chicken breasts with tamarind and coriander

Phil Vickery, who regularly appears on 'Ready Steady Cook' and 'This Morning' created this heart-smart tangy chicken dish.
 

Ingredients

  • 125g (4oz) unsalted buttermilk
  • 3 tbsp chopped fresh coriander
  • 2 tsp tamarind paste, jarred
  • pinch organic chicken stock cube
  • 1 tsp caster sugar
  • 4 skinless chicken breasts
  • juice of 1 lime
  • fresh coriander

Directions

  1. Mix together the buttermilk, coriander, tamarind paste, stock cube and sugar. Place the chicken in a shallow dish then pour over the buttermilk mixture. Cover with plastic film and allow to marinate for a couple of hours, best overnight.
  2. Preheat the oven to //Gas
  3. Remove from the fridge and stir in the lime juice, then pour the whole lot into a non-stick roasting tray.
  4. Cover the tin with foil and bake for about - minutes, or until cooked through. This should take about minutes.
