Phil Vickery's baked buttermilk chicken breasts with tamarind and coriander

Phil Vickery, who regularly appears on 'Ready Steady Cook' and 'This Morning' created this heart-smart tangy chicken dish.
Ingredients
- 125g (4oz) unsalted buttermilk
- 3 tbsp chopped fresh coriander
- 2 tsp tamarind paste, jarred
- pinch organic chicken stock cube
- 1 tsp caster sugar
- 4 skinless chicken breasts
- juice of 1 lime
- fresh coriander

- Mix together the buttermilk, coriander, tamarind paste, stock cube and sugar. Place the chicken in a shallow dish then pour over the buttermilk mixture. Cover with plastic film and allow to marinate for a couple of hours, best overnight.
- Preheat the oven to //Gas
- Remove from the fridge and stir in the lime juice, then pour the whole lot into a non-stick roasting tray.
- Cover the tin with foil and bake for about - minutes, or until cooked through. This should take about minutes.
