Philly lightly spiced chicken and mango pittas

Ingredients

  • 100g Philadelphia Extra Light
  • 1-2 tsp mild curry powder
  • 225g diced cooked chicken, skin removed
  • 1 small ripe mango, skin removed and flesh diced
  • 1 little gem lettuce heart, shredded
  • 8 cherry tomatoes, quartered
  • 4 wholemeal pitta breads
Serves: 4 Preparation: 20   Total Time: 20min whats this
 

Directions

  1. Mix the Philly with the curry powder, stir in the chicken and mango, mixing gently to coat (a little skimmed milk can be added if the mixture is too stiff).
  2. Lightly toast the pittas, cut in half and open out as pockets.
  3. Fill each of the eight halves with shredded lettuce, tomatoes and the chicken mixture.
