Philly lightly spiced chicken and mango pittas

- 100g Philadelphia Extra Light
- 1-2 tsp mild curry powder
- 225g diced cooked chicken, skin removed
- 1 small ripe mango, skin removed and flesh diced
- 1 little gem lettuce heart, shredded
- 8 cherry tomatoes, quartered
- 4 wholemeal pitta breads

- Mix the Philly with the curry powder, stir in the chicken and mango, mixing gently to coat (a little skimmed milk can be added if the mixture is too stiff).
- Lightly toast the pittas, cut in half and open out as pockets.
- Fill each of the eight halves with shredded lettuce, tomatoes and the chicken mixture.
