Pineapple and pink grapefruit with mint sugar

Fresh and fruity, this tasty pud gives you a portion of your 5-a-day as well as a valuable dose of Vitamin C
 

Ingredients

  • 1 medium pineapple
  • 2 pink grapefruits
  • 50g granulated sugar
  • small bunch mint, leaves only
Serves: 4 Preparation: 10   Total Time: 10min whats this
 

Directions

  1. SLICE THE FRUIT
  2. Use a sharp knife to top and tail the pineapple, then stand it upright on a chopping board. Carve the skin away and discard. Rest the pineapple on its side, then cut into wafer-thin slices. Repeat with the grapefruit, cutting away the peel and pith, then cut into slices. Arrange the fruit on plates, catching any juices, and set aside.
  3. MAKE THE MINT SUGAR
  4. Using a pestle and mortar, pound the sugar and mint together until blended. Scatter the mint sugar over the fruit.
