Pineapple, Prawns and Bacon with Curried Mayonnaise

- 2 rashers of streaky bacon
- 1 pineapple
- 2 tbsp mayonnaise
- 1/2 tsp mild curry paste
- 1 tbsp lime juice
- dash of Tabasco sauce
- 75g cooked, peeled prawns
- pinch each of Maldon sea salt and ground white pepper
- 2 tsp fresh coriander, chopped
- 2 lime wedges

- Grill the bacon until it is crisp, leave it to cool, then dice. Meanwhile, cut the pineapple in half lengthways and scoop out as much of the flesh as possible, using a melon baller if you have one. Discard the core and dice the pineapple flesh.
- Mix the mayonnaise, curry paste, lime juice and Tabasco in a bowl, and add the prawns, pineapple and crisp bacon. Mix well and season.
- Finally fold in the chopped coriander and divide the mixture between the pineapple shells. Garnish with a wedge of lime and fresh coriander.
