Pink grapefruit muesli bars

Chunky bars packed with fruit, nuts and oats with a zing of Florida grapefruit and a lovely zingy grapefruit icing make a fabulous treat any time.
Ingredients
- To make the grapefruit muesli bars, you will need
- 180g butter
- 180g light brown sugar
- 4 tablespoons golden syrup
- 375g porridge oats
- 50g cornflakes
- 50g mixed nuts, roughly chopped
- 50g sultanas or raisins
- 1 Florida grapefruit
- 200g icing sugar

- Preheat the oven to /gas Lightly butter the roasting or baking tin.
- Melt the sugar, butter and golden syrup together in a small saucepan. Stir in the oats, nuts and raisins. Coarsely grate the grapefruit zest, add it to the mixture and stir until everything is evenly mixed. Spoon the mixture into the prepared tin and baked for about minutes, until golden and firm.
- Leave to cool for minutes, and then cut into bars. Leave to cool completely and transfer them to a cooling rack.
- Cut the grapefruit in half and squeeze the juice from just one half into a small bowl. Add the icing sugar and stir until smooth. Drizzle the icing over the bars and leave to set. Store in an airtight tin.
