Pork and peanut noodles

Ready in just 20 minutes, this quick and easy dish is perfect for busy families
Ingredients
- 300g thin rice noodles
- 500g pack pork mince
- 250g pack mange tout, sliced in half
- 3 tbsp crunchy peanut butter
- 1 red chilli, deseeded and finely chopped
- 2 tsp soft light brown sugar
- 1 tbsp reduced-salt soy sauce
- small bunch coriander, chopped

- Place the noodles in a large bowl and cover with boiling water, leave to soak for 10 minutes, then drain. Heat a wok or a large frying pan, then cook the pork mince over a high heat for 4 minutes, or until the juices have evaporated and the pork is starting to look crisp. Add the mange tout and fry together for 2-3 minutes.
- Meanwhile, whisk together the peanut butter, chilli, brown sugar and soy sauce in a bowl, and stir in 1 tbsp warm water. Add the noodles and peanut sauce to the pan, toss everything well, then fry for 1 minute, stirring until warmed through. Sprinkle over the coriander, and serve in bowls.
