Pork with Apple and Garlic

Ingredients

  • 2 tbsp olive oil

  • 4 pork loin steaks
  • 10 cloves garlic
  • 1 onion, finely chopped
  • 12 tomatoes, diced
  • 450 ml beef stock, made using beef stock cubes
  • 75ml red wine
  • 1 tbsp red wine vinegar
  • 4 crisp apples, such as English Cox's, peeled
  • freshly squeezed juice of 1/2 lemon
  • 25g butter
  • pinch each of salt and ground black pepper
  • 2 tbsp fresh parsley, chopped

Directions

  1. Preheat the oven to //gas mark Heat the oil in a flameproof casserole dish, on the hob, and brown the pork for minutes turning once. Remove and set to one side.
  2. Crush cloves of garlic and saut&#, together with the onion, in the casserole dish for minutes. Add the chopped tomatoes to the dish and cook for a further minutes.
  3. Place the pork on top of the tomato mixture and add the stock, red wine and wine vinegar. Bring to the boil, then place the lid on the casserole dish and cook in the top of the oven for minutes.
  4. Meanwhile, skin the remaining garlic cloves, place them in a pan of cold water and bring to the boil. Leave to simmer for minutes, then refresh them in cold water and dry. Set to one side.
  5. Using a melon baller, cut of the apples into ball shapes, and set to one side in the lemon juice. Finely chop the remaining apple, excluding the skin and core, and place in the casserole dish. Cook in the top of the oven for a further minutes.
  6. Melt the butter in a frying pan and fry the apple balls and garlic cloves for minutes. Set to one side.
  7. Remove the pork steaks from the casserole dish and set them to one side, keeping warm. Blend the casserole sauce in a food processor, then pass through a sieve. Return the pork to the casserole dish, pour over the sauce and add the apple balls and garlic cloves.
  8. Simmer on the hob for minutes until the apple balls are cooked. Season and serve garnished with parsley.
