Pork Chops with Sage and Apple Sauce

Ingredients

  • 2-3 cooking apples, depending on size (Bramley's are good)
  • grated zest of 1/4 lemon
  • 2 tsp sugar
  • 3 tbsp apple juice or water
  • 4 pork chops
  • salt and freshly ground black pepper
  • 4 sage leaves, finely chopped

Directions

  1. Peel and core the apples and cut into chunks. Place in a medium saucepan along with the lemon zest, sugar and apple juice or water. Cover and cook over a very low heat, checking and stirring occasionally until soft, about minutes.
  2. Meanwhile, heat the grill or a large frying pan, season the chops and grill or fry about minutes each side until done.
  3. Stir the chopped sage into the apple sauce and serve with the pork chops.
