Pork Chops with Sage and Apple Sauce

- 2-3 cooking apples, depending on size (Bramley's are good)
- grated zest of 1/4 lemon
- 2 tsp sugar
- 3 tbsp apple juice or water
- 4 pork chops
- salt and freshly ground black pepper
- 4 sage leaves, finely chopped

- Peel and core the apples and cut into chunks. Place in a medium saucepan along with the lemon zest, sugar and apple juice or water. Cover and cook over a very low heat, checking and stirring occasionally until soft, about minutes.
- Meanwhile, heat the grill or a large frying pan, season the chops and grill or fry about minutes each side until done.
- Stir the chopped sage into the apple sauce and serve with the pork chops.
