Use this delicious herby potato topping for your cottage or fish pie recipes
 

Ingredients

  • potatoes
  • thyme leaves
  • butter, melted

Directions

  1. Peel the potatoes. Always use a French potato peeler (the U-shaped kind, with the blade at right-angles to the handle), as it only removes the barest skin, preserving the nutrients beneath.
  2. Preheat the oven to //gas mark Cut the spuds into chunks and toss into boiling water, cooking for about minutes. Drain then grate (or whizz in small amounts in the food processor).
  3. Strip the thyme leaves from the stalks and mix with the pulped potato and a little butter. Spread this over the top of the pie filling and bake for minutes or until golden on top.
