- 1.1kg red or Desirée potatoes, cooked and quartered
- 230g canned sweetcorn, cooked and drained
- 2 tbsp chopped green chillies
- 5 tbsp minced coriander
- 10 tbsp mayonnaise
- 10 tbsp yoghurt

- In a large mixing bowl, combine the potatoes with the corn and chillies.
- By hand or in a food processor, mix coriander with the mayonnaise and yoghurt. Add dressing to the potato mixture until mixed through and keep chilled until ready to serve.
- This dish is excellent with roasted or grilled chicken, ribs or steaks.
