Ingredients

  • 1kg waxy potatoes, washed
  • 50g butter
  • 2 tsp vegetable oil
  • salt and freshly ground black pepper

Directions

  1. Cut the potatoes in half or quarters if particularly large. Place in a saucepan of cold water and bring to the boil. Cover and simmer for minutes or until you can just get a skewer through them. Drain and leave until completely cold &# overnight is ideal.
  2. Peel and coarsely grate the potatoes and season well with salt and pepper. Heat half the butter and half the oil in a large non-stick frying pan over medium heat. Add the potatoes and press down firmly. Cook for about mins until crisp and golden.
  3. Turn out on to a board or large plate. Add the remaining butter and oil to the pan until melted and hot, then slide in the r&#sti and cook for a further minutes or so until crisp and golden on the second side. Serve at once.
