A delicious Indian dishIngredients
- 2 tbsp vegetable oil
- 1/2 tsp cumin seeds
- 1 1/2 tsp ginger pulp
- 1 green chilli (chopped)
- 1 green pepper (seeded and diced)
- 250g boiled potatoes (diced)
- 75g crushed peanuts
- 1 tsp sugar
- 1 tsp ground cumin
- juice of 1/2 lemon
- salt
- 25g grated fresh coconut or desiccated coconut
- 2 tbsp coriander, chopped

- Heat the oil in a pan and add the cumin seeds. When they begin to crackle add the ginger and green chilli and reduce the heat.
- Add the diced green pepper and continue to fry over a low heat.
