- 250g couscous
- 175g peeled prawns
- 1 shallot
- 2 spring onions
- 1 cucumber
- 12 pitted black olives
- 4 pieces sun-dried tomato
- 1 pack fresh mint, chopped
- 1 small orange
- 1 small lemon
- romaine lettuce and low-fat natural yoghurt, to serve
- freshly ground black pepper

- Cook the couscous according to the packet instructions, omitting the salt. Transfer to a large bowl and leave to cool, then work your fingers through the couscous to separate the grains.
- Add the rest of the ingredients and mix well. Serve with romaine lettuce and low-fat natural yoghurt.
