Prawn or Duck Pancakes

These are often served as a first course in restaurants but its easy to make a version at home. You can make it more complicated for your guests by insisting they eat with chopsticks.
Ingredients
- 1 duck breast
- 10 peeled and cooked king prawns
- 2 carrots
- ½ red pepper
- 2 spring onions
- 1 packet or tin bean sprouts
- 1 handful chopped coriander leaves
- 2 packets rice pancakes (normally about 10 per packet)
- soy sauce

- Preheat the oven to //gas mark Make diagonal cuts in the skin of the duck about m apart. Roast for about minutes until cooked through. Shred into small pieces.
- Cut each prawn in half length-wise.
- Peel the carrots. Slice them thinly into matchsticks, about m long.
- Cut the red pepper and spring onions into thin strips.
- Drain or wash the bean sprouts.
- Wash the coriander, cut off the stalks and chop the leaves finely.
- Lay out the rice pancakes on damp tea towels, cover with more damp tea towels, and leave to soften for #minutes.
- Put soy sauce in a dish. Sprinkle with a few pieces of coriander.
- Put all the ingredients on the table.
