Prawns with Garlic and White Wine

- 3 tbsp olive oil
- 12 large raw prawns
- 4 cloves garlic, 3 roughly chopped, 1 left whole
- 2 dried chillies, sliced (the finer the better) or 1 fresh red chilli
- 4 slices white bread
- 100ml dry white wine
- 1 pack flat-leaf parsley, stalks removed
- 1 lemon (optional)

- Put a frying pan on a high heat and pour in 2 tbsp oil. When the oil is almost smoking, lay the prawns in the pan. Cook for 2 minutes, then turn over and add the chopped garlic and chilli.
- Toast the bread in a toaster or under the grill.
- When the garlic is golden brown, add the wine (watch the flame) and cook over a high heat until reduced by half. Season. Lay the toast on warmed plates, rub with the last clove of garlic and drizzle over the last of the olive oil.
- Add the parsley to the prawns then arrange them on the toast. Spoon over plenty of pan juices and serve with a wedge of lemon.
