Leukaemia Research is a charity devoted to improving treatments, finding cures and learning how to prevent leukaemia and the related blood disorders in both adults and children. Tamzin Outhwaite's Mature Cheddar Mellow Mediterranean Melt
'A quick and easy dish I love to make - I hope sharing it can help raise money for Leukaemia Research'
Serves 2
INGREDIENTS
1 large sun-dried tomato and olive oil ciabatta
1 red pepper
4 slices of Parma ham
2 plum tomatoes, sliced
50g/2oz Cathedral City cheddar, sliced
A few fresh picked basil leaves
2 tsp balsamic vinegar
METHOD
- 1. Cut the ciabatta in half, lengthways.
- Grill the red peppers until the skins have blackened, then remove the skins (or simply buy ready prepared in a jar!)
- Then layer the peeled red peppers, Parma ham, plum tomatoes and slices of Cathedral City cheddar on to the cut halves of ciabatta.
- Place under a medium grill for 3-5 minutes, until the cheese has melted.
- Scatter over the basil leaves, add a splash of balsamic vinegar, and serve.
Smoked haddock with rarebit
This recipe, created by Viv Pidgeon of Leith's School of Food and Wine, can be used to make traditional Welsh Rarebit - just replace the smoked haddock with a couple of slices of toast
INGREDIENTS
110g/4oz Gruyere, finely grated
110g/4oz Cathedral City cheddar, finely grated
4 tsp French mustard
Salt and freshly ground pepper
Cayenne pepper
2 eggs, beaten
2 tbsp beer
4 x 170g/6oz fillet of smoked haddock, skinned and pin boned
METHOD
- Mix the cheeses together with the salt and pepper, cayenne, egg and beer.
- Spread the rarebit mixture thinly over the haddock fillets to the edge and refrigerate for 30 minutes.
- Meanwhile, preheat the oven to 190C/375F/Gas mark 5.
- Place the haddock in a roasting tin and bake for 15 minutes.
- Meanwhile, preheat the grill to its highest setting.
- Remove the fish from the oven.
- If the top is not browned, place under the grill until the rarebit has browned.
- Serve immediately with peas.
