Prosciutto on toasted foccacia

As well as the prosciutto on foccacia and bean puree with greens, you can also add marinated anchovies, olives, a selection of salamis, sliced mozzarella, grilled aubergines and red peppers
 

Ingredients

  • 1 foccacia
  • extra virgin olive oil
  • 4 tablespoons freshly grated parmesan
  • 200 g/7 oz prosciutto
  • 3 or 4 figs, or a ripe pear

Directions

  1. Halve the foccacia horizontally. With a pastry cutter, cut into to cm rounds. Brush with olive oil, and sprinkle with parmesan. Toast or bake until golden brown. Place a ruffle of prosciutto on top, and then a slice of fig or peeled pear .
