Pumpkin Orange Biscuits

A kid-friendly way to use up that scooped-out pumpkin flesh
 

Ingredients

  • 300g plain flour
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1 tsp nutmeg, freshly grated
  • 3 tbsp butter, chilled and cut into small pieces
  • 450g pumpkin, cooked and mashed
  • orange zest
  • 1 egg
  • 1 tbsp double cream
Serves: 12 Preparation: 40   Total Time: 40min whats this
 

Directions

  1. Preheat the oven to //gas mark
  2. Place all of the dry ingredients in a large bowl and combine well.
  3. Add the butter and work into the dry ingredients with a knife until the mixture resembles a coarse meal.
  4. Stir in the pumpkin and the zest from orange.
  5. Place the dough on a floured surface and pat down carefully until m thick.
  6. Cut with a floured m cutter, or cut into m squares.
  7. Place on a well greased baking sheet.
  8. Gather up the scraps, pat down and cut again.
  9. Beat the egg in a small bowl and add the cream.
  10. . Brush the biscuits evenly with the mixture.
  11. . Bake for minutes or until fluffy and golden brown.
