Quarter-Pounder Burgers with Cool Cucumber and Coriander with Soya Bean Potato Salad

Complement a flame-grilled burger with the refreshing taste of yoghurt and cucumber. One of the coolest dishes of the summer!
Ingredients
- Burger
- 2 Beef Quarter Pounders
- 2 ciabatta rolls with olives
- 150g low-fat natural yoghurt
- 1 lemon, juiced
- 1 small handful of chopped fresh coriander
- 1/2 cucumber, sliced
- 1 handful of mixed salad leaves
- Salad
- 200g Birds Eye Soya Beans
- 250g baby new potatoes
- 1/2 medium red onion finely sliced
- 2tbsp olive oil
- 1 sweet pickled gherkin
- 2 1/2 tbsp of gherkin juice
- 1 heaped tsp of English mustard

- Mix the yoghurt and lemon juice with the sliced cucumber and chopped coriander, season to taste.
- Grill the burgers on the BBQ from frozen, toast the ciabatta rolls. Place the burgers in the buns with the sauce on top.
- Salad
- Cook the potatoes, drain and slice. Cook soya beans as per pack instructions.
- Chop the salami. Make the dressing with all the remaining ingredients, season with salt and pepper.
