Quick lamb and potato bake

This quick and easy dish is very family friendly. Quantities can be easily multiplied to feed a crowd, and any leftovers can be frozen
Ingredients
- 2 large potatoes, peeled and sliced
- 1 onion, finely chopped
- 1 tbsp olive oil
- 1 clove of garlic, crushed
- 2 large flat mushrooms
- 500g lamb mince
- 1 tsp ground cinnamon
- 100ml white wine
- 400g can plum tomatoes
- 2 tbsp chopped parsley
- 50g cheddar, grated
- 200ml tub creme fraiche

- Boil the potatoes in salted water until just tender.
- Meanwhile, fry the onion in the oil, then add the garlic and mushrooms and cook until browned. Add the mince, stirring to break up any lumps, and cook for more minute. Add the cinnamon, wine and tomatoes and simmer for minutes. Stir in the parsley and season.
