Quick Tomato Bruschettas

- 3 slicing tomatoes, or large ripe plum tomatoes, cut into slices
- 1 clove garlic, crushed
- 10 fresh basil leaves, roughly torn
- 3 tbsp extra-virgin olive oil
- 4 garlic and parsley mini focaccias
- 70g parma ham slices, cut into strips
- pinch each of salt and freshly ground black pepper

- Marinate the tomato slices with the garlic, basil, seasoning and olive oil for 30 minutes.
- Slice the focaccias in half and toast the tops and bottoms under a moderate grill. Turn the rolls over, top with the tomatoes and ham and grill for minutes under a moderate heat, until the tomatoes are cooked and the ham is crispy. Serve with the olive oil and basil spooned over.
