Quick Tomato Bruschettas

Ingredients

  • 3 slicing tomatoes, or large ripe plum tomatoes, cut into slices
  • 1 clove garlic, crushed
  • 10 fresh basil leaves, roughly torn
  • 3 tbsp extra-virgin olive oil
  • 4 garlic and parsley mini focaccias
  • 70g parma ham slices, cut into strips
  • pinch each of salt and freshly ground black pepper

Directions

  1. Marinate the tomato slices with the garlic, basil, seasoning and olive oil for 30 minutes.
  2. Slice the focaccias in half and toast the tops and bottoms under a moderate grill. Turn the rolls over, top with the tomatoes and ham and grill for minutes under a moderate heat, until the tomatoes are cooked and the ham is crispy. Serve with the olive oil and basil spooned over.
