Ragout of Mushroom & Courgette

A mixture of mushrooms, courgettes, cream and onions served with pasta.
Ingredients
3 medium courgettes
- 2 tbsp olive oil
- 25g butter
- 275g button mushrooms, wiped and halved
- 1 medium onion, sliced
- 1 clove garlic, finely chopped
- 150ml white wine
- 150ml double cream
- 1 tbsp freshly chopped tarragon
- pinch each of Maldon sea salt and ground white pepper
- rice or ribbons of pasta, to serve

- Cut the courgettes into quarters lengthways and then dice into m/n chunks. In a large saucepan heat the oil, then stir fry the courgettes for minutes until just cooked, remove and put to one side.
- Melt the butter, then fry the mushrooms, onions and garlic for minutes, until soft.
- Add the wine and leave to reduce for minutes, then add the courgettes, stir and season. Stir in the cream and simmer gently for minutes. Finally, add the tarragon and check the seasoning. Serve immediately with rice or ribbons of pasta.
