Real Tartar Sauce

You can make a simpler version of this sauce tartare by using a shop-bought mayonnaise and mixing in all the ingredients except the raw egg
 

Ingredients

  • 2 eggs, hard boiled
  • 1 egg, raw
  • salt and freshly ground black pepper
  • 250ml olive oil or, if a lighter taste is preferred, sunflower or grapeseed oil
  • 1 tbsp white wine vinegar
  • 1 tsp parsley, chopped
  • 1 tsp chives, finely cut
  • 1 tsp capers, chopped
  • 1 tsp dill pickles, chopped
  • dash Tabasco sauce (optional)

Directions

  1. Slice the hard-boiled eggs in half lengthways. Scoop the yolks out into a bowl and, using a fork, mash them into a paste with the raw egg yolk. Finely chop one of the boiled egg whites and reserve for later.
  2. Very slowly pour in the oil, stirring constantly (like making a mayonnaise). When it reaches a thick consistency, stir in the vinegar.
  3. Mix in the remaining ingredients and the chopped boiled egg white.
