Real Tartar Sauce

You can make a simpler version of this sauce tartare by using a shop-bought mayonnaise and mixing in all the ingredients except the raw egg
Ingredients
- 2 eggs, hard boiled
- 1 egg, raw
- salt and freshly ground black pepper
- 250ml olive oil or, if a lighter taste is preferred, sunflower or grapeseed oil
- 1 tbsp white wine vinegar
- 1 tsp parsley, chopped
- 1 tsp chives, finely cut
- 1 tsp capers, chopped
- 1 tsp dill pickles, chopped
- dash Tabasco sauce (optional)

- Slice the hard-boiled eggs in half lengthways. Scoop the yolks out into a bowl and, using a fork, mash them into a paste with the raw egg yolk. Finely chop one of the boiled egg whites and reserve for later.
- Very slowly pour in the oil, stirring constantly (like making a mayonnaise). When it reaches a thick consistency, stir in the vinegar.
- Mix in the remaining ingredients and the chopped boiled egg white.
